New Orleans Chef Ashley Jonique Freshens Up Traditional Dishes with Creative Vegan Options

When discussing New Orleans cuisine, the classics like charbroiled oysters, beignets, crawfish beignets, are often favored. However, chef Ashley Jonique, a proud New Orleans native, is refreshing these staples. Known as LeFatSnack on Instagram, Jonique has amassed over 53,000 followers, sharing her journey from homemade cooking to social media sensation. Originating from an area rich in culinary traditions, she infuses these age-old recipes with personal flair.

“If you check my Instagram, people often get excited with me,” she shared during the “A Twist on NOLA Classics” segment at the Food and Wine stage. She spoke about using everyday leftovers creatively and making cooking approachable for all, particularly for kids.

Jonique’s inspiration stems from her grandmother, who she observed cooking traditional dishes. As a mother of two herself, she’s committed to creating meals her children enjoy, despite a busy lifestyle.

Despite her children being picky eaters, Jonique ensures they appreciate the essence of New Orleans cuisine – its rich flavors, use of local produce, touch of personality, and dash of tradition. She highlighted her favorite dish, gumbo, emphasizing the connection it brings to New Orleans’ culture.
